Homemade Tzatziki Dip
Ingredients
Dry
- 1 cup shredded cucumber
- 1 cup plain Greek yogurt
- 1 teaspoon minced garlic
- 1 teaspoon dried parsley (can substitute 1 tablespoon fresh chopped parsley)
Wet
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon lemon juice
Instructions
- Shred (or very finely chop) the cucumber. Place on clean kitchen towel and squeeze over the sink to remove fluid.
- Add all ingredients into mixing bowl and stir.
- Serve with chopped veggies such as carrots or peppers, whole grain crackers, or whole grain pita bread.
