Homemade Tzatziki Dip

Ingredients

Dry

  • 1 cup shredded cucumber
  • 1 cup plain Greek yogurt
  • 1 teaspoon minced garlic
  • 1 teaspoon dried parsley (can substitute 1 tablespoon fresh chopped parsley)

Wet

  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon lemon juice

Instructions

  • Shred (or very finely chop) the cucumber. Place on clean kitchen towel and squeeze over the sink to remove fluid.
  • Add all ingredients into mixing bowl and stir.
  • Serve with chopped veggies such as carrots or peppers, whole grain crackers, or whole grain pita bread.
